Guyana is a country on South America’s North Atlantic coast but is culturally connected to the Caribbean. It is known for calypso music. Pepperpot is the Guyana national dish. It is stewed meat (choose from beef, pork, mutton, or chicken) flavored with cinnamon, cassareep (special sauce from cassava), and Caribbean hot peppers, and other ingredients. It is served with homestyle bread, rice or roti.

It can be reheated for several days because the cassareep serves as a preservative.

BARBADOS AND COU COU & FLYING FISH

Flying fish Barbados – These two are intricately linked with each other because Barbados is known as the land of the flying fish.

The national dish of Barbados is Cou Cou and Flying Fish. The main component of this dish is the fillet of steamed or fried flying fish with a siding of cou cou. It has a resemblance to polenta or grits. It also has lime juice, spices, and fresh vegetables which elevate its wonderful flavors.

Barbadian cuisine, also called Bajan cooking, is a happy mixture of Portuguese, African, Irish, Indian, Creole, and British infusions.

BAHAMAS AND CRACKED CONCH WITH PEAS & RICE

The Bahamas is a popular Caribbean destination with 700 islands well sprinkled over 100,000 square miles of the beautiful ocean. It is an ecological oasis with the clearest water in the whole world.

Cracked Conch with Peas and Rice is the national dish of the Bahamas. This conch or crayfish is served scorched/charred or raw in lime juice or cracked (dipped in cracker crumbs and then fried). It is authentic Bahamian/Bajan cuisine wherein seasonings unique to Bajan culture are mixed in with the crayfish in a wet rub of thyme, onion, garlic, pepper, and marjoram. Add in also lime juice and oil for extra body and flavor.

The national dish of Anguilla is Pigeon Peas and Rice. It is simmered in a coconut broth well seasoned with garlic, onion, thyme, and peppers. It goes well with stews such as fish stew, stewed jerk chicken, or oxtail.

Antigua and Barbuda is an independent country and a proud member of the Commonwealth. It is strategically located at the intersection of the Atlantic Ocean and the Caribbean Sea. It is known for rainforests, reef-lined beaches, and resorts.

Fungee and Pepperpot is the national dish of Antigua and Barbuda. It is a much loved commercial cornmeal dish served alongside vegetable mash and a sauce made from garlic, tomatoes, and salted codfish. Fungee is served together with Antiguan pepperpot which is a spicy meat soup.

Crab and Callaloo is the national dish of Trinidad and Tobago. For callaloo, this flavorful dish uses dasheen bush as the main ingredient and is simmered in a creamy and tasty coconut sauce. Crab is added to enhance this dish which is traditionally consumed as a soup.

Roasted Breadfruit and Fried Jackfish is the national of St. Vincent and the Grenadines. It is enjoyed as a filling lunch selection.

The breadfruit is roasted over an open fire until it is slightly charred at the outside, while the center is still soft and tender.

The jackfish is marinated in lemon juice well before it is mixed in flour and fried until it is crispy. This dish is sided by a sauce that blends in tomatoes, garlic, onions, thyme, and other herbs and vegetables.
